My kids love my recipe.
Barbecue Chicken Quesadillas
3-4 chicken breasts
1/2 c. of your favorite barbecue sauce
1/4 cream cheese
I simmer chicken breasts in chicken stock or water for approximately 45 min, on medium-low. Let cool, then drain liquid, shred chicken. Mix in barbecue sauce and cream cheese, heat on low until cream cheese is mixed well. Serve on flour tortillas or toast chicken inside of tortillas on a dry cast iron skillet until lightly browned and crispy.
Mix equal parts sour cream and salsa for a great dipping sauce.
