Just thought I would share a favorite side dish in my household.
3 large carrots, peeled and sliced into 1/8 inch rounds
3 T. of orange juice
1/4 tsp. of salt
Put carrots into a 2-quart baking dish, top with orange juice and salt, cover tightly with foil and bake for 30-45 minutes in 375 degree oven. Carrots should be firm but tender.
