Stove Top Rice-a-Roni Casserole
When money was tight and we had a lot of mouths to feed, we created this stove-top Rice-a-Roni "casserole." It is inexpensive if using store brands, and tasty.
1 box any flavor Rice-a-Roni
1 lb. ground beef or ground turkey
1 can cream of mushroom soup
Brown ground beef, drain. In Dutch oven or large pot, cook Rice-a-Roni according to directions. When done, add ground beef and can of soup. You can also add a drained can of mushroom stems and pieces, and/or black olives (if you can find them on sale), and/or cooked onions. If needed, add water to thin a little. Simmer until heated to your preference.
