Mini Sour Cream Biscuits

This recipe is fast and super, super easy!!!!

1 c. Bisquick or something like it
1/2 c. sour cream (room temperature)
1/4 c. melted butter

Combine all ingredients and put into mini-size biscuit pan.  Cook at 425 degrees for 10-12 minutes (or judge according to your oven temp since they all cook differently).

Variations:

You can also add shredded cheese of your choice, chopped or minced garlic or both and then they taste like Red Lobster biscuits.  Or you can top them with jam or a combination of cinnamon and sugar.

I cook these things up in advance, sometimes doubling or tripling the recipe.  Once done, I put them in the snack-size baggies (5 or 6 per) and freeze.  They're great to grab on the run and throw in my purse or when our kids/grandkids are here and just want a fast snack to carry with them.
